Hearty Beef and Mushroom Stew

Craving a cozy, comforting meal this holiday season? (Even if it's not winter in Australia, we can still enjoy a good stew, right?) 

This Hearty Beef and Mushroom Stew is the perfect dish to warm your soul, especially as the weather starts to cool down—unless you’re in the southern hemisphere, in which case, enjoy it while you’re pretending it’s winter. Packed with lean beef, savory mushrooms, and a rich bone broth base, it’s a perfect option for those family dinners or a weekend meal. Plus, it’s super easy to make!

Ingredients

  • 500g beef (extra lean, cut into cubes)
  • 100g mushrooms (brown works best, but any kind will do)
  • 2 tbsp olive oil
  • Fresh or dried thyme
  • 1/2 can crushed tomatoes
  • 1 cup Nutra Nourished Bone Broth
  • Salt and pepper to taste

Cooking Instructions

1. Heat up the oil

Start by heating 2 tablespoons of olive oil in a large pot over medium heat. Toss in finely chopped onions and a sprinkle of thyme (fresh or dried, your call). Cook until the onions are soft and fragrant.

2. Brown the beef

Add the 500g of extra lean beef to the pot. Stir it occasionally, making sure the beef is browned on all sides.

3. Cook the Mushrooms

Slice up the 100g of brown mushrooms and toss them into the pot. Let them cook for about 5 minutes, stirring occasionally, until the mushrooms soften. (If you’ve got other mushrooms lying around, throw them in—why not?)

4. Add bone broth and tomatoes

Pour in 1 cup of Nutra Nourished Bone Broth and 1/2 can of crushed tomatoes. Stir everything together until it’s nicely combined.

5. Season and Simmer

Add salt and pepper to taste. If you’re feeling extra herb-y, toss in some more thyme. (Don’t be afraid to go a little wild with the seasonings.)

6. Simmer to perfection

Reduce the heat to low, cover the pot, and let the stew simmer for about 1.5 hours. Stir occasionally to ensure everything is cooking evenly. 

7. Serve and enjoy

Once the stew thickens and the flavors have melded together, serve it hot with a side of rice or whatever your heart desires.
